Ingredients for 6 People
- Put 500g of chickpeas to soak overnight in hot water.
- The next day peel and wash them and then cook in 1.5 litres of water.
- Add salt, 1/2 teaspoon of pepper, good pinch of saffron and a sliced onion.
- Leave to cook gently, stirring from time to time.
- Pass through a vegetable sieve.
- Reheat just before serving and add a little water if it is too thick.
- It should be the right consistency to be eaten with a spoon.
